Mediterranean Baked Cod with Fennel & Orange

An anti-inflammatory powerhouse that tastes like the Mediterranean coast

Ingredients (serves around 4):

  • 4 cod fillets (or similar white fish like haddock/halibut)

  • 2 large fennel bulbs, keep the fronds for garnish

  • 2 oranges, sliced (1/2 pressed for juice)

  • 3 cloves garlic, minced

  • 1/2 cup Kalamata olives, pitted

  • 1/4 cup extra virgin olive oil

  • Sea salt and black pepper

  • Fresh fennel fronds for garnish

Instructions:

Prep the oven: Preheat to 400°F (200°C). Prepare the fish: In a large baking dish, drizzle olive oil over it and season it generously. Toss sliced fennel with half the olive oil, some of the minced garlic, salt, and pepper into a bowl and mix it well. Place the fennel around the fish.Add citrus: Arrange orange slices over the fennel and fish. Drizzle with fresh orange juice. Final touches: Scatter olives around the dish. Bake: 20-25 minutes until fish flakes easily and fennel is tender. Finish: Garnish with a mixture of olive oil, fresh fennel fronds (sliced) and garlic.
